Peyton Manning Guacamole


So, the Superbowl is this Sunday, and I'm sure everyone has been inundated with multiple chip, dip, wing, chili, potato skin, and meat recipes.

I'm no different then anyone else.  Here's my contribution to the Superbowl Appetizer Mania, but with a different reasoning then all of the male dominated foodstuffs.I love Peyton Manning.  His commercials are great, and he's one hell of a quarterback, and I don't really even follow the NFL.  (College Football, and the UW Huskies however, are a different story)  I know probably 5 players in the NFL.  Sam will tell me a certain team is playing, and I'll  respond with "Mark Sanchez?,"  or "Brett Farve?"  I never have any questions about Peyton Manning, because he is just that awesome.  I'm officially saying it:  Hunter and I are rooting for the Colts.  Sam is rooting for the Saints, and that is an issue we're working through.  It might require couples therapy.

A few years ago, I got into making appetizers or desserts for Superbowl parties, and had more fun naming everything.  There was the 'Take a (steak) Bite out of Tom Brady', or the '12th Man Sugar Cookies' which later became known as 'Tom Brady's a Fairy Sugar Cookies,' (no offense intended, I just dislike Tom Brady.  I'm convinced he made a deal with the devil to get all those Superbowl wins), and of course, 'I heart Peyton Manning Guacamole'.  This is the recipe that's lasted, and I've made it every weekend for the past 3 weeks, and I'll be making it again this weekend, when Peyton Manning kicks the crap out of the Saints.




I heart Peyton Manning Guacamole

3 avocados; pitted peeled and mashed (Safety tip:  Don't stab the pit with the tip of your knife     while holding the avocado in your hand.  This ends up with you almost needing stitches.  Listen to me, I speak from experience)
1 lime, juiced
0.5 tsp. coarse salt (Taste and add more salt as you go, if you want)
0.5 c. diced red onion 
3 tbs. chopped fresh cilantro
2 plum (Roma) tomatoes, diced (I scoop the seeds out with a spoon to make the guac less watery)
1 tsp. minced garlic
Ground cayenne pepper to taste, or however much Hatch green chile, or jalapeno you can stand.
  • In a medium bowl, mash together avocados, lime juice and salt - taste and adjust salt if desired.  Stir in rest of ingredients, seasoning to taste.  
  • Refrigerate at least one hour to allow flavors to meld.  Taste again and re-season if you want.

  1. I remember the 12th man sugar cookies and the hunt to find a t-shirt cookie cutter! Ahh good times! I love all your fun names. You are so creative!

  2. This is PERFECT...I just bought avacados yesterday in hopes of making some guac this weekend but I didn't have a recipe. Thanks a bunch!
